Dr. Gardner's Favorite Granola

In a large bowl, mix:

6 cups oatmeal

1/2 cup brown sugar or sucanat

1 cup unsweetened shredded coconut*

1/3 cup raw sunflower seeds*

1/3 cup sesame seeds*

1 cup sliced or slivered almonds*

(*We buy these items in the bulk food section of Winco)

In a saucepan, melt over low heat:

1/2 cup coconut oil

1/2 cup (or less) honey

1 Tbsp. molasses

2 tsp. cinnamon

2 tsp. vanilla extract

When oil mixture is smooth and combined, pour over dry mix and stir until well coated.  Put into 10×15 pan (or half sheet cake pan) and cook for 35 minutes, stirring once halfway through.  Delicious with almond milk or mixed in yogurt.
